Refreshing Watermelon Salad – a delightful summer treat that will make mealtime easier and so much fun!
Watermelon is my favorite fruit after mangoes. Growing up I was kind of allergic to watermelon. You see, I always used to end up with high fever after consuming watermelon. But I loved it so much that I used to sneak a small bite whenever we had it at home? Eventually, as I grew up, I stopped getting sick and so I like to make myself believe that my love for this refreshing fruit made me overcome this allergy (if ever there was such a thing.)
Whenever I think of watermelon, it always makes me think of my childhood and how much I used to love eating it (well, I still do). I think the best way to have watermelon is as is. This sweet and juicy fruit really doesn’t need anything else. But this salad is definitely for those days when you want to switch things up a little.
Fun Fact: Watermelon is 92% water but is loaded with nutrients. It has significant levels of Vitamin A, B6 etc. as well as has antioxidant properties.
This Salad is made from Juicy Watermelon chunks tossed with cucumber, red onion and feta cheese with a light drizzle of lemon juice and honey. It tastes best when chilled. So you can easily make it a little ahead of time.
Here’s how you can whip up this delicious salad and impress your friends and family with this fun and easy recipe –
Ingredients
- Watermelon cut into cubes - 4 cups
- Cucumber - 2 cups diced
- Red Onion - 1/2 cup (thinly sliced)
- Crumbled Feta Cheese - 1/4 cup
- Honey - 2 tbsp
- Lemon Juice - 2 tbsp
- Pinch of Salt (as per taste)
Instructions
- Toss the watermelon, cucumber, onion and feta cheese together. If you don't like feta cheese, you can skip it.
- Whisk the honey, lemon juice & salt (optional) together in a small bowl and drizzle it over the salad and toss it again.
- Refrigerate until ready to serve.
Notes
PS: You can even add chopped mint leaves to this salad which will make it even more delicious!
This Watermelon Salad can be easily served as a side with Grilled Chicken or any other dish of your choice. We had it with Chicken Wraps and the combo was delicious!
