SOME KEY THINGS TO KNOW ABOUT EXTRA VIRGIN OLIVE OIL

  • Extra virgin olive oil is made by pressing olive oil, without heat or chemicals; it’s known as the first cold-pressed olive oil.

  • A panel of trained, expert tasters tests for taste defects and the presence of positive attributes of fruitiness, bitterness, and spiciness. If the oil doesn’t have the signature fruity taste and harmonious balance, it won’t receive an Extra Virgin rating.

  • Extra virgin olive oil has a high smoking point of 400°F, so it is suitable for cooking and baking.

  • Between use, store your oil somewhere dark and cool (around 57°F, if possible), not on the counter or near a stove, and never in the refrigerator. Keep the lid screwed on tight, and use your oil within six months of opening.

TIPS ON USING EXTRA VIRGIN OLIVE OIL

  • Experiment with different oils for different occasions. 

  • Use delicate oils for salad dressings or as a condiment over mild foods, like vegetables, fish, eggs, or potatoes. 

  • Pair robust oils with hearty foods that can stand up to the intense flavor, like steak or spicy soup. 

  • With a high smoking point of 400°F, extra virgin olive oil is suitable for cooking and can enhance any dish by drizzling on as a finisher.

Now coming to this recipe, I tried to recreate one of the recipes that were included in the sampling package that was sent to me. It is one of the most easiest and flavorful recipes that I have ever made. Certainly a keeper in my opinion. 

In this recipe, I have used Le Stagioni d’ Italia Extra virgin Olive oil. It is 100% Italian Extra Virgin Olive Oil and is the first cold-pressed olive oil from the first round of extraction of fresh, intact olives—it has not been heated during processing, so it retains its full nutritional value.

It gave this dish such an amazing flavor. I have been using this Extra Virgin Olive oil in one of my previous recipes as well, and it is by far, my very favorite.

Garlic Roasted Veggie Pasta

Ingredients

  • Fettucine Pasta - 8 oz
  • Vegetables - 6 cups (I used squash and red bell pepper)
  • Garlic - 10 cloves
  • Extra Virgin olive Oil - 2 -3 tbsp (to roast veggies) & 3-4 tbsp for pasta
  • Grated Parmesan - approx 1/4 cup
  • Fresh parsley- 4 tbsp
  • Chili Flakes - 1.2 tbsp (optional)
  • Salt & pepper to taste

Instructions

  1. Pre-heat oven to 400 degrees. Places your vegetables and garlic on a baking sheet. Drizzle 2-3 tbsp of Extra Virgin Olive Oil, salt & pepper. Toss well and roast for about 15 min or until the veggies turn tender.
  2. In a medium to large pot, cook pasta according to the package instructions.
  3. Drain pasta and save 1/4 cup of the liquid for later use.
  4. Return pasta to the pot, add roasted veggies and 3-4 tbsp of olive oil. Then add grated parmesan cheese, parsley, chili flakes, salt & pepper to taste.
  5. Toss all the ingredients while adding the reserved cooking liquid slowly until creating a silky sace. You may not need all of the reserved liquid.
  6. Serve immediately.
