You know how sometimes even the simplest of dishes can instantly elevate mealtime and make it more exciting? This easy Chipotle Pesto dip is one of those dishes that can make even the most boring mealtimes so much more delicious.
We had first tried this dip at a restaurant in New York and both my husband and I had loved it too much. I was so inspired by it that I decided to replicate it at home and to be honest, this tastes way better than the restaurant version.
It has just a couple of ingredients and will take you less than 10 minutes to whip up a batch of this delicious dip. It has the right amount of flavor as well as spice level (not too hot and not too bland) and I bet you will fall in love with it just as much as we do.
This Chipotle pesto dip goes great with so many things but one of my favorite ways is to pair it with McCain® Veggie Taters™. They are a perfect sidekick for our family during mealtime.
As a mom, there are several days when I’m struggling with what to serve during mealtime. And don’t even get me started with snack time! To make the Chipotle Pesto dip, you just need a couple of ingredients like chipotle peppers, pine nuts, garlic, oil & parmesan cheese. Put them in your food processor or your blender and let it do all the work.
Before I whipped up the dip (which literally takes less than 10 minutes to make), I preheated my oven so that I could put these babies inside it and serve them up hot.

It is a perfect combination and a great option when we need to switch up things during mealtimes while still providing better for you options to our families.

Here’s how to make the ridiculously easy Chipotle pesto dip –
Easy Chipotle Pesto Dip with Veggie Taters
Ingredients
- Chipotle Peppers - 4 (I used the ones in adobo sauce)
- Pine nuts - 1/2 cup
- Garlic - 3-4 cloves
- Freshly grated Parmesan Cheese - 1/2 cup
- Oil - 1/4 cup
Instructions
- Put the garlic and oil in your food processor or blender and pulse for about 2-3 minutes.
- Then add the chipotle peppers and pine nuts to the blender and pulse til leveything is combined properly.
- Remove the mixture in a bowl and add grated parmesan cheese. Mix properly and serve.
Notes
You can use store bought grated parmesan cheese but freshly grated parmesan cheese works best for this recipe as it helps to gives this dip a richer flavor.
You can store this dip in the refrigerator for 2-3 days.
