A hearty power packed bowl with quinoa, sweet potatoes, avocado and snow peas, topped with a glazed mix of crunchy pistachios, almonds, cherries and pomegranate flavored apples.
Power Bowls have been trending for quite some time now in the foodie world. And why wouldn’t they? After all, they are not only delicious but also very convenient since you can eat them straight from a bowl.
If you haven’t already made your own ‘Power Bowl’ it’s time to start now! Most power bowls have grains, greens and a protein, packed everything in one dish.
This Crunchy Sweet Potato Quinoa Veggie Bowl is one of those comfort dishes that you can have on a chilly Fall day and is one of the easiest recipes ever. This recipe is also great for entertaining your guests during a Fall gathering at your home and would be a hit at Fall Potluck parties as well!
The quinoa takes just 15-20 minutes to prepare and you can make it in advance. The only oil that I used in this recipe is for drizzling the sweet potatoes before you put them in the oven for baking.
I love baking sweet potatoes, especially in the Fall and winter season. I cut my sweet potatoes into round slices not because they look more pretty (which I totally think that they do) but because I find them much more easy to cut this way and I feel they also get cooked more uniformly 😀 It’s more like a personal preference but you can cut them in regular chunks if you’d like.
When the sweet potatoes come out of the oven, all you have to do is assemble your power bowl. Scoop in some quinoa in the bowl, add your sweet potatoes, snow peas, avocado slices and scallions.
I also love adding extra crunch to my dishes as it gives a great texture to them. So in order to give this recipe an added flavor & crunch, I used Naturally Pomegranate Flavored Pistachios Glazed Mix by Sahale Snacks which has whole roasted pistachios, almonds, cherries and pomegranate flavored apples with a touch of lemon and black pepper.
It’s a trip for your taste buds and so worth the hunt and gives this dish an instant flavor boost. Seriously, Fall entertaining couldn’t get easier than this!

And now onto the recipe –
Ingredients
- Quinoa - 1 Cup
- Sweet Potato - 1
- Avocado - 1/2 (cut into slices)
- Snow Peas/ Sugar Snap Peas - 8-10
- Scallions - 1-2
- Pistachios & Almonds - I used Naturally Pomegranate Flavored Pistachios Glazed Mix by Sahale Snacks
- Lemon Juice - 1 tbsp
- Salt & Pepper - as per taste
Instructions
- Preheat oven to 400 degreed F. Cut sweet potato in approx. 1/4" round slices and place them on a baking sheet lined with foil. Drizzle a little bit of oil and salt & pepper and bake for 20 minutes.
- Flip the sweet potato slices after 10 minutes so that they will get baked evenly.
- Rinse and drain your quinoa. Add 2 cups water to 1 cup quinoa and boil it for 15 minutes (or as per your package directions)
- Put together your Veggie Power bowl by first adding quinoa, and then adding avocado slices, snow peas and sweet potato slices. Finally add lemon juice to it and then top it off with roasted nuts of your choice (I used Naturally Pomegranate Flavored Pistachios Glazed Mix by Sahale Snacks)
