These easy and delicious Chicken Lettuce Wraps have the goodness of fresh salad and sautéed chicken served with a delicious homemade Peanut Dipping Sauce. A refreshing meal that will be ready under minutes.
Lettuce wraps are one of my favorite meals that are light and refreshing. In this recipe, I drizzled a fresh homemade Peanut sauce on these Chicken Lettuce wraps. I also added a few crushed peanuts on top to give an extra crunch and texture to these Lettuce Wraps. It can’t get better than this. And for an even more refreshing touch, I paired my wraps with some ice cold Coca-Cola™.

Inspired by the upcoming NYC Food & Wine festival, I decided to make these Chicken Lettuce Wraps paired with Coca-Cola. Like I said, I’m all about keeping things simple and easy.
For this recipe, I got the Ready Pac Multi Serve Salad that I got from the prepared salads section of my ShopRite. I especially love the way everything is packaged in it as it keeps all the ingredients fresh and delicious. I also got my Thinly sliced chicken breast and Coca-Cola on my trip to Shoprite.
If you are a ShopRite® shopper like me, you can use your Price Plus Card to buy a 16oz Coca-Cola™ or 20oz FUZE Fusions® for .50¢ when you buy a 11.25-11.75oz Ready Pac Multi-Serve Salad in a single transaction with your Shoprite PRICE PLUS® Club between 8/27/17 – 12/31/17. I like that I can just grab the Ready Pac Salad and put everything together quickly. It is also very convenient to carry to work or if you’re traveling somewhere and don’t have time to go and grab a meal.
But since we were having this at home, I decided to use them to make wraps out of it. You can use the same ingredients and put it in a Tortilla as well.
The peanut dipping sauce in this recipe is completely optional since the Ready Pac Multi Serve Salad comes with a Salad dressing. But both my husband and I love my peanut sauce very much and so I drizzled some on these wraps too.
Ingredients
- Thinly Sliced Chicken Breast - 4
- Ready Pac Multi Serve Salad - 11oz (I used Caesar Salad Mix)
- Romaine Lettuce - 4
- Crushed Peanuts (Salted/ Unsalted - as per your preference) - 1/3 cup
- Salt & pepper as per taste
- Oil - for cooking the chicken
- Peanut Butter - 1/4 cup
- Honey - 2 tbsp
- Garlic Powder - 1 tbsp
- Chili Flakes - 1/2 tbsp
- Water - 2 tbsp
Instructions
- Clean the Chicken, cut it into bite size pieces and rub salt and pepper over it. Heat some oil in a pan and sautee the Chicken for about 10-15 minutes or until the chicken is fully cooked.
- Place the romaine Lettuce on a dish and put the ingredients of the Ready Pac Multi Serve Salad onto the Romaine Lettuce - cherry tomatoes, croutons, and lettuce. Place the sauteed chicken pieces on top.
- Finally add the shredded cheese and lightly drizzle the Caesar Dressing and Peanut Sauce on top.
- Additionally, you can also dip the wraps in this homemade peanut sauce.
- Combine the peanut butter, garlic powder, honey, chili flakes and water and mix it well.
Notes
You can adjust the sweetness of the Peanut Sauce depending on your brand of Peanut Butter and as per your liking. Generally Peanut Sauce has about a Tbsp of Soy Sauce as well but I have skipped it in this version as I wanted to keep things simple.
And just like that, the Chicken Lettuce Wraps were done. I hope you give this delicious recipe a try. It’s our new favorite!
