I love make-ahead breakfast recipes so I don’t have to spend time in the kitchen in the morning before heading out the door.
This simple triple berry-baked oatmeal is a healthy recipe that you can make ahead of time and have on busy mornings. It has no added sugar and it also doesn’t have any eggs so this recipe is vegan friendly.
The delicious berries give an added boost of flavor and are just what you need to get your day started off on the right track.
You can make these ahead of time and keep them in the fridge. When you want to eat it, you can just heat it up for a few seconds in the microwave, drizzle some honey or maple syrup on it and you are good to go.
I have used peanut butter in this Triple Berry Baked Oatmeal recipe, but you can substitute it with almond butter or any other seed butter of your choice. You can even skip it entirely if you’d like.
It is a pretty straightforward recipe – just mix all the ingredients together, put them in a baking pan, and bake it. You will just need 10 minutes of prep work to make this healthy and delicious recipe.
Easy Vegan Triple Berry Baked Oatmeal
Ingredients
- Rolled Oats - 1 1/2 cup
- Peanut Butter - 2 tbsp
- Applesauce - 1/2 cup
- Ground Flax seeds - 1 tbsp
- Honey - 1/4 cup
- Almond/ Oat Milk (You can even use regular milk if making a non-vegan version)
- Baking Powder - 1 tsp
- Salt - 1/2 tsp
- Berries (strabwerries, blueberries, raspberries) 3/4 cup
- Coconut oil (to grease the baking pan)

Instructions
- Preheat the oven to 375 F.
- In a medium sized mixing bowl, take peanut butter, applesauce, ground flax seeds and honey and mix it with a whisk till it is properly combined. Then pour milk in it and add baking powder and give it a good whisk.
- Add in the rolled oats and again give it a good mix.
- Lastly, add in berries (can be fresh or frozen).
- Grease a square pan or a small cast iron pan with coconut oil (you can use butter for a non-vegan version as well)
- Pour in the mixture and bake at 375 F for 25 min or until the center is no longer soft.
- Alow it to cool for 10 minutes and then serve with a drizzle of honey or maple syrup.
