The Holiday season has officially begun and what better way to celebrate it than by baking some super easy cookies?! These easy and healthy Almond Flour Shortbread cookies are delicious and so addicting that you will not want to share them with anyone!

These Almond Flour Shortbread Cookies are the most easiest cookies that you will ever make.

My little one absolutely loves these – and I don’t mind making them because they are so easy to make. All you need is one bowl and 4 ingredients & you are good to go.

Since these cookies do not have any refined flour or butter in them, you can enjoy them guilt-free.

They are gluten-free and are reasonably healthy since all they have is almond flour, a little bit of sugar, coconut oil, and pure vanilla extract.

It is also perfect for people who are looking for gluten-free recipes and is also keto-friendly.

To elevate the taste of these cookies and to take them to the next level, I have used Extract in this recipe. I have been using Rodelle products for a couple of years now and I am highly obsessed with them.Β

I have drizzled a little bit of chocolate on the cookies – but you can decorate it as your heart desires. You can keep them plain, add sprinkles on them or even dip them completely in chocolate – the possibilities are endless. You can even use different shaped cookie cutters and make them look even more festive!

These festive cookies are perfect to gift as well during the holiday season – especially for health-conscious people. So let’s get started with this super easy recipe –

Easy Almond Shortbread Cookies

Ingredients

  • Almond flour - 1 1/3 cup (don't pack it tightly)
  • Sugar - 3 tbsp + 1 tbsp water
  • Coconut oil (melted) - 2 tbsp
  • Pure Vanilla Extract - 1 tsp (I used Rodelle Reserve Pure Vanilla Extract)
  • Pinch of salt
  • Chocolate chips 1/4 cup (optional - for drizzling on top of the cookies)

Instructions

  1. In a medium bowl, combine all of the ingredients with a spatula. It is best to sift the almond flour so as to avoid any lumps.
  2. Use your hands to form dough. Flatten the dough with your hands and wrap it tightly with plastic wrap. Chill dough in the fridge for about 1/2 hour.
  3. Preheat oven to 350F (175C)
  4. Use a rolling pin to roll out the dough to about 1/4th inch thickness. Use a cookie dough cutter to cut round shapes.
  5. Remove the scraps of the cookie dough, roll it again and repeat the above process. You should get about 12-15 cookies. Place cookies on baking sheet lined with parchment paper.
  6. Bake for 11-13 minutes or until edges begin to turn golden brown. Cool cookies on baking sheet for 3-4 minutes and then transfer to wire cooling rack to cool completely.
  7. Once the cookies are completely cooled, you can drizzle melted chocolate on it.

Notes

Store in an airtight container to retain freshness.

Q. What type of almond flour to use?

A. This recipe uses blanched almond flour.

Q. Can I substitute coconut oil?

A. Sure. You can use ghee (which is clarified butter) instead of coconut oil – tastes just as good.

Q. Can I substitute sugar?

A. Yes, you can use pure maple syrup instead. I have not tried it with honey so I cannot comment for sure whether it will work in this recipe.

Q. Can I skip vanilla extract?

A. Vanilla extract elevates the taste of these cookies so it’s better not to skip it.

A. Rodelle Reserve will stand out in your recipes because it is two-fold (double strength), French Oak Aged and each bottle is further enhanced by a rich Gourmet Vanilla Bean to add even more flavor.

You can even use Rodelle Gourmet Vanilla Extract or Rodelle Organic Vanilla Extract instead.

Q. How long will the cookies last?

A. Keep them in an airtight container and they will taste fresh for about 1-2 weeks.

HELPFUL TIP 1

Don’t chill the dough for more than half an hour as it can be a little difficult to roll. If you do end up chilling it for a longer time, wait for some time for it to soften up a bit so you can work with it easily.

HELPFUL TIP 2

Use your hands to form the dough. If you find that you are not able to form the dough properly, add an extra tsp of coconut oil to it.
