With summer in full swing, this Avocado & Egg Bagel Sandwich with Walnut Pesto is an easy and delicious breakfast or brunch option.
Sunny days are here to stay and what better way to start the day with a wholesome breakfast with eggs and avocado! Whether you are having a lazy weekend in with your family or a fun brunch at home with a couple of friends, you can’t really go wrong with this Avocado Egg Bagel Sandwich.
To jazz things up a little, I added a little bit of walnut pesto which takes less than 5 minutes. Why walnut pesto? Because well, a little versatility never hurts. You can totally make regular pesto or completely skip it if you’d like to. But let me tell you, this walnut pesto will really make your sandwich taste great. Oh, and it tastes amazing in wraps as well!
Add sliced avocado, fried egg and some greens to a toasted bagel with some of that walnut pesto and you are all done. I have used everything bagel coz lets face it, nothing beats an everything bagel. The crunchy, salty flavor basically gives me life. If you have a particular preference though, you can totally go for it.
The avocado-egg combo is one of those power combos that will keep you full for a long time. Avocado and eggs are excellent sources of omega 3 and protein.
Also, make sure your bagel is fresh as that can totally change the game. I get mine from one of the local bagel shops where they make fresh bagels every day.
Using ingredients that are better for you has always been a priority for me. Knowing where your food was sourced from as well as checking the labels can help you make a conscious decision towards what food products you choose to buy and eat.
I have used that are pasture raised eggs and are USDA Certified Organic as well as American Humane Certified.

Coming back to this quick and easy breakfast or brunch idea –
Start by lightly toasting the bagel. Make the walnut pesto by using a few ingredients like walnuts, basil leaves, garlic etc. and smear it onto one side of the bagel. Top it with a few avocado slices.
Add your favorite greens (I used baby arugula).
For the fried egg, I generally prefer using a small round pan to get that perfect round shape.
Add a little bit of salt & pepper and you are done!
Ingredients
- Everything Bagel - 2
- Eggs - 2 (I used Handsome Brook Farm Organic Pasture Raised Eggs)
- Avocado - 1
- Baby Arugula - approx. 1 cup
- Salt & Pepper as per taste
- Basil leaves - 1 cup
- Walnuts - 6-8
- Garlic cloves -2
- Olive Oil - 3-4 tbsp
- Lime Juice - 2 tbsp
- Salt as per taste
Instructions
- For walnut pesto, add walnuts, basil leaves, lemon juice, garlic cloves salt and olive oil in a blender and blend it till everything combines properly.
- Cut the bagel into half and lightly toast it.
- Slice the avocado.
- For the fried egg, take a small round pan. Add some oil to it and crack an egg into it. Let it cook slowly for about 2-3 minutes before flipping it. Cook on both sides.
- Add the walnut pesto the base of the bagel. Top it with a few slices of avocado and arugula leaves.
- Finally, add your fried egg sprinkle some salt and pepper and enjoy!
