This Quinoa Salad is a perfectly healthy way to brighten up those hot summer days!

Hi my lovelies! How have you been doing? I had mentioned in my previous posts that I have been traveling a lot lately. Because of this, I have lost count of the times I have had take out or dined at restaurants.

On my recent trip to Applebees and WholeFoods, I had quinoa (was trying to stay healthy, you see!) I also came across this delicious post by a dear blogger friend – Lynne and so I was keen on making quinoa salad at home. 

Quinoa is an excellent plant-based protein source, especially for vegetarians and vegans. It is also gluten-free and is often used as a substitute for rice, couscous or even pasta.

It’s a nice way to add protein to your diet, especially on days when you choose to go meatless.

This quinoa salad is our new favorite. If you know me, I am always up for trying out various salad recipes 🙂 The more options you have, the lesser the chances are that you’ll get bored to eat salads.

So let’s get started on this super delicious, colorful and healthy quinoa salad – 

Quick & Easy Quinoa Salad

Ingredients

  • Quinoa - 1 cup
  • Yellow Bell Pepper - 1/2
  • Red Bell Pepper - 1/2
  • Onion - 1/2
  • Corn - 1/2 cup
  • Dried Cranberries (optional) - 1/4 cup
  • Lime Juice - 2 tbsp
  • Salt - as per taste

Instructions

  1. Cook the quinoa as per the instructions on the packet. A general rule of thumb is to take 2 cups water for 1 cup of quinoa and bring it to a boil. Once it starts boiling, lower the heat and cook for about 15 minutes.
  2. Chop the bell pepper and onion and mix it in the quinoa along with the corn and dried cranberries. (Steam the corn before if you prefer it that way) Squeeze a little bit of lemon juice on it and add salt.
  3. Keep it in the fridge and let it chill until you are ready to serve.
