This Quinoa Salad is a perfectly healthy way to brighten up those hot summer days!
Hi my lovelies! How have you been doing? I had mentioned in my previous posts that I have been traveling a lot lately. Because of this, I have lost count of the times I have had take out or dined at restaurants.
On my recent trip to Applebees and WholeFoods, I had quinoa (was trying to stay healthy, you see!) I also came across this delicious post by a dear blogger friend – Lynne and so I was keen on making quinoa salad at home.
Quinoa is an excellent plant-based protein source, especially for vegetarians and vegans. It is also gluten-free and is often used as a substitute for rice, couscous or even pasta.
It’s a nice way to add protein to your diet, especially on days when you choose to go meatless.
This quinoa salad is our new favorite. If you know me, I am always up for trying out various salad recipes 🙂 The more options you have, the lesser the chances are that you’ll get bored to eat salads.
So let’s get started on this super delicious, colorful and healthy quinoa salad –
Ingredients
- Quinoa - 1 cup
- Yellow Bell Pepper - 1/2
- Red Bell Pepper - 1/2
- Onion - 1/2
- Corn - 1/2 cup
- Dried Cranberries (optional) - 1/4 cup
- Lime Juice - 2 tbsp
- Salt - as per taste
Instructions
- Cook the quinoa as per the instructions on the packet. A general rule of thumb is to take 2 cups water for 1 cup of quinoa and bring it to a boil. Once it starts boiling, lower the heat and cook for about 15 minutes.
- Chop the bell pepper and onion and mix it in the quinoa along with the corn and dried cranberries. (Steam the corn before if you prefer it that way) Squeeze a little bit of lemon juice on it and add salt.
- Keep it in the fridge and let it chill until you are ready to serve.
And just like that, your Delicious and Healthy Quinoa Salad is ready!
