Now that Fall has officially begun, the crisp air and the changing colors of the leaves is making everything so much more prettier. I can certainly feel the chill in the air with the early morning temperatures sometimes dropping to as low as the 50s.

But as much excited as I am for Fall, I’m also a little sad to say goodbye to summer. The best part about summer for me is outdoor grilling and as the weather starts getting chilly, it also means saying goodbye to outdoor grilling.

But does that mean that you can’t get your fix of grilled recipes? Absolutely not! As we transition to the colder weather, I love to bust out my trusted grill pan for making grilled recipes which I had bought during a killer deal on Black Friday.

Speaking of deals – I’m excited to share a sweet deal at the end of this post since you guys know how much I love sharing offers and deals whenever I can with all of you.

This grilled chicken salad is surprisingly simple and is bursting with fresh flavors. It is such a hit in my home and I can eat it all day every day.

 

Zesty Mediterranean Grilled Chicken Salad

Here’s a funny thing about me – I love salads but I am someone who easily gets bored if I eat the same thing over and over again. My husband always finds this strange and funny but I keep telling him that I don’t think I’m the only one who does that. Are you guys like me? Or do you agree with my husband?

But to my surprise, I can eat this salad almost every day. In the past 2 weeks, we have made this salad almost 3-4 times and I still can’t get enough of it. I think the simplicity of the ingredients and the light zesty dressing of lemon, olive oil and herbs makes it one irresistible combo.

I like to use thinly sliced breasts for this salad since they cook really quickly.

And since I’m a huge fan of watermelons, I made some refreshing watermelon lemonade to go along with this salad. 

I came across a giant watermelon the other day in Walmart. Knowing that they will soon be out of season, I wanted to get my hands on it. It was so huge, that I couldn’t even lift it and put it in my shopping cart! Thank God I had the hubs along with me and he came to the rescue. 

I decided to make fresh watermelon lemonade to go along with my salad because well, fresh always tastes way better!

Oh and I’m totally digging that heart-shaped watermelon cutout 🙂 I thought it was so adorable.

Refreshing Watermelon Lemonade with Zesty Mediterranean Grilled Chicken Salad

For this Zesty Mediterranean Grilled Chicken Salad, I grilled my chicken on my Grill Pan. After grilling my chicken that I had marinated in olive oil and herbs, this is what I’m left with. It’s what I like to call the aftermath of cooking –

While I’d love it if my kitchen could become magically clean, I have found a perfect solution that helps me tackle all the mess under minutes.

I will be honest with you, I used to use my grill pan very less out of the fear of ruining a perfect pan. You see, I always used to worry about washing it properly because I don’t want the pan to scratch and ruin it.

As many of you must probably know putting nonstick pans in the dishwasher is a big no-no. I know many people say it doesn’t matter and put their non-stick stuff in the dishwasher anyway.

But if you really want to make them last long, it’s best to hand wash them. When it comes to cleaning my cookware, especially my nonstick cookware, I’m very particular about it. I only use Scotch-Brite® Non-Scratch Scrub Dots Sponge as I know I can trust my cookware with them. Plus they are so affordable too!

And for all my heavy duty cookware like pots and pans, I use the Scotch-Brite® Heavy Duty Scrub Dots Sponge (which comes in the green packaging)

Speaking of a clean kitchen, don’t you all hate it when you clean the dishes but your new Sponge starts looking dirty and filthy? The Scrubbing Dots technology in these sponges allows the sponges to rinse clean. This means no more food residue stuck to the sponges.

Now that you know how I tackle my kitchen messes, let’s get started with the delicious recipe –

Zesty Mediterranean Grilled Chicken Salad with Watermelon Lemonade

Ingredients

    Zesty Mediterranean Grilled Chicken Salad
  • Chicken Breast - 1lb. (thinly sliced)
  • Cucumber - 1
  • Tomato - 2
  • Kalamata Olives - 5-7
  • Feta Cheese - 3 tbsp
  • Mixed greens of your choice - 22 oz. or a medium sized bag
  • For the dressing
  • Olive Oil - 1 tbsp
  • Lemon juice - 3 tbsp
  • Dried Oregano - 2 tbsp
  • Mint Leaves - 4-5
  • Black Pepper powder - 1 tbsp
  • Watermelon Lemonade
  • Medium sized watermelon - 1/2 (cut into chunks)
  • Lemon juice - 1/2 cup
  • Sugar - 3/4 cup
  • Mint leaves (for garnishing)

Instructions

  1. Mix the olive oil, lemon juice, dried oregano, chopped mint leaves and black pepper powder well. Use half of this mixture to marinate the chicken. Marinate it for at least half an hour.
  2. Chop the cucumber, tomatoes and mix them with Kalamata olives and the greens of your choice.
  3. Heat the grill pan and drizzle a bit of oil on it. Place the chicken breast on the grill pan and let it cook for about 7-10 minutes on each side.
  4. Remove from the grill pan and let it rest.
  5. Cut them into pieces and add it to the rest of the veggies. Drizzle the remaining lemon juice dressing on it and add the Feta cheese on top. Your salad is ready!
  6. Watermelon Lemonade
  7. Roughly cut the watermelon in medium sized pieces. Add them to your blender and pulse.
  8. Strain the watermelon juice in a sieve (you can leave this step if you do not mind a thicker consistency)
  9. Add lemon juice and sugar and stir well. You can adjust the sweetness as per your taste and depending on how sweet your watermelon is.
  10. Garnish with fresh mint leaves and ice.

    Just wanted to let you know that the Like button does not appear on your blog posts at least not in the email version and I still cannot follow the text because of the pictures and pop ups. Do you have a version for visually impaired? There is too much movement on the page for me to read the full article. I wind up having to quit because of my poor eyesight.
