Have you hopped on the Rainbow Bandwagon yet?? The Rainbow trend has been going around for such a long time now that I couldn’t resist and decided to make my very own Rainbow Salad.
This colorful and delicious rainbow salad is not only vegan but also packed with a lot of protein. I have added a lot of fun colors to this salad – which is perfect for Spring and Summer.
The only chopping that I really did was cutting the bell peppers and lettuce. I was thinking of adding purple cabbage to this – but well, I’m not a huge fan of cabbage. So I decided to toss in some delicious blueberries which have amazing antioxidant properties. Also, the chickpeas or garbanzo beans are a great source of Protein – hence the name – Rainbow Power Salad!
I haven’t added onion in this salad. If I remember correctly, I think I got bored to cut an onion! Yes, guys – I get bored to cut even half an onion! But hey – if it’s going to save some time, why not right?
Now that spring has begun, I wanted to keep the dressing simple and light by making a light and zesty lemony-garlicky olive oil dressing. Ahh, the joys of clean eating! It can’t get any simpler than this.
If you aren’t a fan of garlic, you can skip the garlic from the dressing if you want.
And then to make it even cuter, I mixed it all up and put it in this heart bowl and devoured it.
So here’s how I made this easy and delicious rainbow salad –
Ingredients
- Boiled Chickpeas - 2 cups
- Yellow Bell Peppers (cut into small cubes) - 1/2 cup
- Blueberries - 1/2 cup
- Lettuce (chopped) - about 2 cups
- Shredded Carrots - 1 cup
- Salt & Pepper - as per taste
- Olive Oil - 2 tbsp
- Lemon juice - 1 tbsp
- Minced garlic - 1-2 cloves
Instructions
- Make the dressing by mixing the olive oil, minced garlic and lemon juice and stir well.
- Chop the lettuce and bell peppers. Add all the ingredients in a bowl and mix it well.
- Add salt and pepper as per taste and your salad is done.
Notes
You can add more lemon juice if you like a more citrusy flavor.
So what are you waiting for? If you love colors as much as I do, go ahead and make this delicious salad.
Now that I have had my fix of a Rainbow Salad, I’m off to find out whether unicorns are real!
