These healthy No-Bake Date Energy Bars are perfect as a mid-afternoon snack or you can even carry it on the go. Guilt free and Vegan - a perfectly healthy treat to satisfy those sweet cravings.

Don’t you all love it when you have all the ingredients for a healthy recipe lying right in your kitchen pantry? Well, I definitely do and when I came across this super easy recipe, I was thrilled!

My sister shared this recipe with me and I immediately fell in love with it so decided to share it here with all of you.

 healthy date energy bars

This is just a 6 Ingredient recipe ya’all… no butter, no added sugar, no baking, no-nonsense!! Dates pack a nutritional punch… and these energy bars are perfect as a mid-afternoon snack or you can even carry it on the go.

Just throw them in your bag and you have a snack ready for those sudden hunger cravings.

And for those of you who don’t like eating dates as is, I’m sure you will enjoy them in this form.

healthy date bar

Healthy No-Bake Date Energy Bars

Ingredients

  • Dates (pitted)- 4 cups
  • Almonds - 1/4th cup
  • Walnuts - 1/4th cup
  • Cashews - 1/4th cup
  • Pistachios - 1/4th cup
  • Dried cranberries/ cherries & Raisins - 1/3rd cup
  • Tip: You can also use trail mix which you may have at your home. Just measure out the ingredients approximately.

Instructions

  1. Dry roast all the nuts for a few minutes. This will give a nice toasted flavor to the energy bar. This is a completely optional step.
  2. Put all the nuts in a food processor and grind it until coarse.
  3. Now add the pitted dates, raisins and dried cranberries in the food processor and pulse it for a couple of minutes. If you don't have a food processor, a powerful mixer works just as well. The consistency should be thick and sticky.
  4. Line a tray with parchment paper. Put this combined mixture of dates and dry fruits on it and spread it out evenly. Cut it into squares and you are done!
  5. You can even roll them in shredded coconut.
  6. For easy storage, wrap the individual pieces in plastic wrap or store them in an airtight container.

This is great! I love energy bars with dates. Have you ever thought about soaking your nuts and seeds before using them? It makes them a lot easier to digest and makes the nutrients in them more available for the body to absorb. I wrote last week about why and how to do it, if you’re interested! Yum, those look fantastic! I love making granola bars, but I often have a hard time using dates. I have a Ninja food processor and blender, but I still struggle with it. I buy my dates in bulk so maybe they’re too dried out. Any tips?

    • Reply

I think they may be too dry if they are getting difficult to process in the Ninja. One tip I had read was to soak the dates in water for about an hour or so which makes blending much easier. Maybe that will help. Thanks a lot for your sweet comment Grace ?
