Easy Tomato Corn Summer Salad

Summer is here and what better way to beat the heat than by making a quick chilled corn tomato salad?!

I am someone who likes to make quick recipes which can be made ahead of time. Well this one is a no brainer.

Ingredients:

  1. Tomatoes – 2
  2. Fresh Corn kernels – 1 or 1 1/2 cup
  3. Lime juice – 2 tbsp
  4. Coarsely ground peanuts or whole roasted peanuts – 1/4th cup
  5. Cilantro – optional
  6. Salt and pepper to taste

Directions:

Roughly chop the tomatoes and bring the corn kernels to a quick boil. (If you are using the canned version, there is no need for this step. Just drain them well.)

In a bowl, combine all the ingredients together and squeeze lime juice over it. Mix everything together and set it aside in the refrigerator for at least half an hour. The peanuts add a nice crunch to the salad but if you are allergic to nuts, you can skip them. Tastes best when it is served chilled.

One can also add green onions and crumbled feta cheese in it. I have tried adding both and it tastes great! Enjoy!
